Chorizo Stuffed Dates Wrapped in Bacon
I recently made these and not only are they really, REALLY easy to prepare, but they are SO GOOD! I took this picture of them as I was prepping but forgot to take a picture of the final product. Oh well. Trust me and make them anyways!
This recipe is adapted from one I found on Food and Wine dot com.
Ingredients:
1 small Spanish Chorizo (this is the "hard" kind, not the soft which is known as Mexican chorizo)
(casing removed)
24 Medjool Dates, pitted
12 slices of bacon, halved
Directions:
Preheat oven to 400 degrees F
Line a baking sheet with parchment paper
Slice the chorizo into 24 small pieces; stuff each pitted date with one piece of chorizo. Wrap the date in half a slice of bacon and secure with a toothpick.
Place the dates on the baking sheet and bake for 12-15 minutes. Serve hot or at room temperature.
