    Baked Avacado Fries

    Creamy baked avocado fries coated is crispy panko breadcrumbs.


    ingredients

    2 large avocados, sliced
    salt, pepper and cayenne to taste
    1/2 cup flour
    1 egg, lightly beaten
    1 cup panko bread crumbs
    1/4 cup ranch dressing
    1 chipotle chili in adobo, chopped

    directions

    Season the avocado slices with salt, pepper and cayenne to taste, dredge them in flour, dip them in egg and then panko breadcrumbs.
    Place the avocado slices in a single layer on a wire rack on a baking sheet and bake in a preheated 425F oven until golden brown, about 15-20 minutes.

    Made these last night!!! Yum!!! Although next time I will try not to put too much planko on them as I really put a ton on each one. They come out very crispy! I also thought the avocado would be hard to handle and break but they didn't. Only one did but I tried dredging with a fork. Fingers are a must here. You'll just have to keep rinsing the egg and planko off your fingertips. Set up close to your sink if you can, I did and it made it easy.

    My avocados were also the good ones from Costco,and were perfectly ripened, so timing your avocados is key! If they get too soft they may be too hard to handle. If they are not ripe enough they won't taste as creamy and delicious!

    Also, next time I will add more seasoning. Maybe a bit of garlic powder or celery salt too. I do think though it was my overuse of planko that made the seasoning not come through as much.

    We thought we had explored every way to enjoy the buttery, rich yumminess of

    Yum I am going to try these but won't be able to use panko crumbs but I bet they are still as nice I love avocado
