    Bruschetta with Tomato & Basil

This is a must have at all our partys we go to or host! Its very simple and tasty!

1 1/2 lbs of Cherry or Ripe Plum Tomatoes (the redder the better)
    2 gloves of minced garlic
    1/2 medium onion chopped small
    1tbsp Olive Oil (extra virgin)
    1tspn of red wine vinegar
    5 freshly chopped basil leaves
    Salt and pepper to taste

1 loaf of French Bread slicked about 1/2 inch slices

Brush eat slice with Olive Oil and Bake at 450 for about 5-6 mins until light brown and toasted. Remove from the oven and place on serving dish! You can put the brucschetta mixture on each one or you could let your guests do it! I like to put it on b/c the bread absorbs the dressing and tomato taste.

    Enjoy

A bit of good fresh mozzarella to my bruchetta. And I add a few olives to my recipe.
