Cucumbers in Sour Cream
A yummy, healthy refreshing salad.
4-5 medium cucumbers
1 ½ Tb salt
2 Tb sour cream
1 Tb minced chives
2 Tb minced fresh dill
1 clove minced garlic
black pepper to taste
Peel cucumbers and quarter them lengthwise. Scrape out seeds. Slice thinly. Add salt, mix to coat, then set aside for 1 hour.
After 1 hour, rinse cucumbers thoroughly and press out excess liquid. (A kitchen towel or strainer is good).
Stir in rest of ingredients and chill 1 hour to let flavors blend.Last edited by LariP; 01-18-2013 at 03:03 PM.

I've made a similar dish Cucumbers and onions. But never have seeded them. I actually like the seeds in cucumbers though I know some don't.
My moms recipe used milk, vinegar and some sugar. I learned about using sour cream a few years ago and prefer that to the old way. I've never added garlic. But have had the dill in it before.
