    Roasted Bacon Wrapped Cream Cheese Jalapenos

    We have a greenhouse and grow peppers, we always end up with tons of peppers so I have to find ways to utilize them.

    Here is one of my favorites!

    Ingredients:

    Jalapenos
    Cream Cheese
    Bacon
    Toothpicks

    I cannot tell you how much because I do make them in big batches, and I usually have a huge tub of cream cheese in the fridge..... but I have lots of pictures so you will get an idea.

    Cut jalapenos in half, removing stem part and seeds. If you have a fresh garden, you may want to wear gloves during this whole process so you don't get fire fingers!

    Roast Jalapenos on the grill. Not too long, just long enough to soften a bit so they are not too crunchy and green tasting when you grill them later. Trust me, this is an important step in making these.

    Stuff each half with cream cheese and wrap bacon around entire pepper and try to cover all places the cheese can escape as much as possible. Secure bacon with a toothpick. Sometimes you only need 3/4 of a slice depending on the size of the pepper.

    Grill for 10 to 15 minutes on low, turning often until the bacon is cooked. They are also yummy reheated in the microwave as well.

    These are my husband's favorite snack but I have never made them on the grill. Such a good idea for summer months - will definitely have to make these soon!

    In South Texas they are called Cowboy Popcorn... next time you make them, squeeze a lime over a couple of 'em and tell me whatcha think.
