    Noodle soup recipe




    Comforting soups are mandatory to fight the cold weather and the shorter days that come with winter.
    This cozy coconut soup gets its cheesiness from mushrooms. It tastes so good you would never believe how easy it is!
    My favorite soup is indeed Mushroom and coconut noodle soup recipe (https://orientasian.in/mushroom-and-...e-soup-recipe/) which is vegan, dairy-free and you can add rice noodles to make it gluten-free.

    Ingredients for the soup recipe
    1. 1 packet mushroom (sliced)
    2. ˝ inch ginger (finely chopped)
    3. 4-5 spring onion(chopped and greens seperated)
    4. 1 1/2 tsp OrientAsian Red Chilly Paste
    5. 1 cup water
    6. ˝ coconut milk
    7. 1 ˝ tsp oil
    8. Salt to taste
    9. 30 gms precooked noodles
    10. 1tsp chopped coriander
    11. 1tsp fried onions
    12. 1 tsp toasted groundnuts.
    Instructions
    1. In a wok heat oil and add spring onion whites and finely chopped ginger.
    2. Sauté the onions till translucent and then add the sliced mushrooms. Add some salt.
    3. After it’s cooked for 2 min add 1 1/2 tsp of the OrientAsian Red Chilli Paste (https://orientasian.in/red-chilli-paste/). Add 1 cup water. Let the curry simmer.
    4. Now add 1 cup coconut milk and after mixing it well take it off heat.
    5. To plate, in bowl put the precooked noodles.
    6. Top it with the chopped spring onion greens.
    7. Pour all of the mushroom soup.
    8. Garnish it with chopped coriander, fried onions, and toasted groundnuts.
    If you want to add more protein to the dish, you can add grilled tofu, paneer or chicken.
    Pro-tip : Cook noodles in 10 times more water, add salt and oil to the boiling water before adding the noodles. Usually, take 5-7 mins to cook.
