    Super Lucky Elephant Fried Rice

    2 cups steamed Super Lucky Elephant Jasmine Scented rice
    1/4 cup diced cooked ham
    1/4 cup diced cooked bacon
    1 egg
    1/8 cup diced onion
    1/4 cup drained canned or frozen whole kernel corn
    1/4 cup drained canned or frozen green peas
    1/2 diced tomato
    1 tsp sliced green onion
    1/4 tsp ground white pepper
    1 TBSP soy sauce
    2 TBSP vegetable oil
    Parsley for garnish

    Fry diced onion in 1 TBSP oil over med heat until tender add bacon and ham and fry until warm and fragrant. add corn and peas and mix with soy sauce place in a bowl.

    Scramble the egg in 1 TBSP oil break into small pieces. Add the steamed rice and diced tomato to the egg. Add the meat mixture and blend together.

    Place on serving plate and garnish with parsley if desired.

    Bruce made this for dinner tonight. EASY and Yummy! He did use pea pods instead of peas, and we were out of corn so omitted that. We both agree next time to use two eggs. And we are out of white pepper so used fresh ground black pepper.
    We both prefer the taste and texture of Jasmine rice over other rices and this recipe was on the package of the most recent type "lucky elephant"
