Pancit (penset) by way of the Philippines
I was born in the Philippines, and this is a recipe my mother made all of the time.
1 medium onion, chopped
4 cloves garlic, chopped
1 cup cooked shrimp, sliced
1 cup cooked pork, chopped
1 cup cabbage, sliced into thin strips
2 carrots, peeled then grated
4 Tbs soy sauce
1 cup water
salt and pepper to taste
1 lemon, cut into thin wedges
Pancit noodles (14 oz package)
1 Saute chopped onions and garlic. Add the pork and shrimp, saute for 1 minute. Add cabbage, carrots, soy sauce and 1 cup water. Turn heat to medium and simmer until carrots are cooked through, about 8 minutes.
2 Place noodles on top of mixture and spoon vegetables and broth over the noodles. Your may have to add a little more water if the noodles are not softening. Cover and steam for about 2 minutes. Turn out on platter and garnish with lemon wedges.Last edited by LariP; 01-19-2013 at 07:35 PM.
