Sticky Lemon Chicken
1 1 large chicken jointed into 8-10 pieces (I used chopped chicken breasts)
sea salt and black pepper
3-4 tbs Olive Oil
2 cloves of garlic, halved horizontally
Few Thyme sprigs
Splash vinegar
2 tbs dark soy sauce
3 tbs honey
1 Lemon finely sliced
Bunch of flat leafed parsley
Preparation
1) Season the chicken with salt and pepper and heat the olive oil in a large sauté pan. Brown the chicken pieces (in batches if necessary) over a high heat with the garlic and thyme for 2–3 minutes on each side until golden brown. Return all the chicken to the pan, add the vinegar and bubble until reduced by half. Drizzle over the soy sauce and honey and shake the pan to mix.
2) Pour in a ladel full of hot water and add the lemon slices. Let the liquid bubble and reduce down until syrupy, which will take about 10 minutes or so. By now the chicken should be cooked through.
3) Transfer the chicken to a platter and sprinkle over the chopped parsley.
Serve with rice.

Oooh! I think I would like this as chicken wings for our Superbowl. You could brown the wings, remove them, reduce the sauce, then add the wings back in to cook through and get coated with the sticky lemon sauce. I'm looking to make several different flavors of wings.

Excellent idea! on the wings.
When my son was small I took him to a Chinese restaurant and since he was in a reluctant to eat anything green stage Lemon Chicken is what we ended up ordering for him to try. He loved it and got it whenever we went for Chinese for years.
That's why I want to try this. The one difference on this compared to the Lemon Chicken we got in restaurants is that was usually breaded fried chicken. But I might make it with breaded chicken too.

Well mine didn't look anything like the picture. The lemon sauce was much darker from the soy sauce I would assume. But the family loved it. Even Saturn, and you can't find much more of a picky eater than her.

I just love these recipes that use soy sauce, garlic and a sweetener, like the honey in this recipe. Finger lickin' good!
