South of the Border Quiche
This is more of a brunch type food, so not sure if this is the correct place to post.......
Ingredients:
8 eggs
1/4 cup flour
1 teaspoon baking powder
1/2 pound (2 cups) monterey jack cheese, grated
1/2 cup cottage cheese
1/4 cup butter or margarine, melted
1 4-ounce can green chilies, drained and diced
Serve with:
Sour cream &
Salsa
Preheat oven to 350 degrees F and grease quiche pan.
Beat the eggs; add flour and baking powder. Fold in cheese; mix well. Stir in melted butter and chilies. Pour the mixture into a greased quiche pan.
Bake for 35 minutes. Remove from oven and cool for approximately 10 minutes. Serve in wedges with a dollop of sour cream and salsa.
