Cheesy Apple n' sausage breakfast bake
We had this tasty bake the morning of Thanksgiving. The cheese balances out the sweetness of the apples.
1 1/2 lb ground sausage
4 apples, peeled and diced
2 cups cheddar cheese (I like sharp)
1 1/2 cups pancake mix
1 1/2 cups milk
6 eggs
1/2 tsp cinnamon or apple pie spice
salt and pepper to taste
1. Preheat oven to 375 F
2. Mix pancake mix, milk, eggs, salt and pepper until smoothly blended. Set aside.
3. Cook sausage in a large skillet over medium-high heat. Cook until no longer pink. Drain fat. Mix in apples and apple pie spice.
4. Spread evenly into a large glass baking dish (3 quarts) lightly buttered or sprayed.
5. Top with 1 cup of cheese.
6. Pour batter over mixture.
7. Bake 30-35 min. until knife poked in center comes out clean.
8. Top with remaining cheese. Bake 3-5 min longer to melt cheese. Let rest 5 min before eating.Last edited by LariP; 01-18-2013 at 08:50 PM.
