Eggs Benedict
So the other night, I decided to make breakfast for dinner. I made eggs benedict, french toast and home fries. I got the recipe for the eggs benedict from Allrecipes.com and tweeked it because last time I made it... well, didn't come out exactly like I wanted. But this time, o o o, it was fabulous. So here is my recipe for hollandaise sauce.
4 egg yolks
2 1/2 tbsp lemon juice
1 tsp Worchestershire sauce
12 tbsp (a stick and a half) of butter
Salt and pepper
Bring water in bottom of double broiler to simmer. In top of double broiler (I used a bowl and small pan since I don't have a double broiler, yet) whisk together yolks, lemon juice, Worchestershire sauce and salt and pepper and 1 tbsp of hot water. Let this warm a little and then add the butter, 1-2tbsp at a time. If it gets to thick, add a tbsp of hot water until it gets to a good consistency - thick but not too thick. I don't know how to describe it.
I poached a couple of eggs, warmed up so canadian bacon in a skillet and toasted halved english muffins under the broiler.
It was so good.
And the sauce, I had some leftover in the fridge. I added it to a baked potato about 2 days later. Very yummy.

Mmmm I love eggs Benedict! Although I must confess, I cheat and use the packet to make my sauce. I found one I like a lot anyhow, forgot about making them actually. I think I should try this!

I love breakfast for dinner !sometimes that just hits the spot. great picture !looks really delicious
