Blueberry Banana Muffins
I made these this morning for breakfast and I think they turned out so moist and delicious! They're also a little lower in sugar and fat than most muffins but they definitely don't skimp on taste. I couldn't even wait to let them cool completely before devouring one with a little bit of cream cheese on top. Hope you will give them a try!

Makes 12 servings
1 cup mashed Bananas (2 medium)
1/4 cup white sugar
2 tbsp light butter
1 large egg
1/4 cup unsweetened applesauce (I used blueberry, but I've also made the banana bread with natural or grannysmith)
1 1/4 cup all purpose flour (or if you have whole wheat flour can use that)
1/2 tsp Baking soda
1/4 tsp salt
1/2 cup fresh or frozen, thawed blueberries
1. Preheat oven to 350°.
2. In a large mixing bowl, combine softened butter and sugar, and beat with a mixer at medium speed, about 3 minutes or until well combined. Add the egg and applesauce, and beat another 2 minutes. Fold in the bananas.
3. Lightly spoon flour into dry measuring cups, and level with a knife. Combine the flour, baking soda, and salt in a separate large bowl.
4. Add the flour mixture to the banana mixture, 1/2 cup at a time, mixing after each addition until moistened.
5. Add the blueberries and gently fold in.
6. Spray each cupcake paper or muffin tin with non stick spray and fill them 2/3 to 3/4 full until all batter is used.
7. Bake for 25-30 minutes. They are done when you insert a toothpick and it comes out clean (don't stuff it in a blueberry, it won't be clean ). Transfer to a wire rack to cool.
They're approx. 95 calories per muffin. Enjoy!!
