Butter muffins
Very easy -we call it breakfast muffins ,as we have them instead of english breakfast some mornings
1,5 cup of flour
1 big egg
3/4 cup of sugar
2 teaspoons of baking powder
1/4 teaspoon of salt
1/4 tablespoon nutmeg
1/4 cup of oil
3/4 cup of butter
1) teaspoon of vanilla extract
For the "icing " -if you can call it an icing
2 tablespoons of melted butter
1/2 cup of sugar
1) preheat oven to 180 c
Put paper muffin cases in the muffin tray
2) in a separate bowl using a mixer mix eggs and sugar until smooth
In other bowl mix flour, baking powder, salt, nutmeg,
Add dry ingredients to "wet" and mix until smooth
3) fill the muffin cases to a 3/4 of hight with butter mix and bake 15-20 min or until Wooden pick cones out dry
4) when muffins are slightly cooler ,use a brush to brush a melted butter on the top and then dip them in sugar -job doneP Robins Photography

Butter muffins
Oh, I have to bake these muffins asap. Thank you for this recipe. But the muffin on the photo seems to be very huge. Isn't it?
