Nest doughnuts
Very easy (and messy recipe ) something that brings back my childhood memories -this Polish recipe creates light and fluffy "cake/doughnut -hard to explain what it is as you dont need yeast like with a traditional doughnuts .
Ingredients for about 25 sockets (depending on the size of pipe you will use):
200 g of all purpose flour
Butter 100 g
4 eggs
pinch of salt
cooking oil
icing:
200 g icing sugar
2-3 tablespoon lemon juice
1) In a saucepan boil a cup of water with butter and a pinch of salt. Reduce the heat and pour the flour while stirring vigorously all the time. Stir dough until it is smooth and begins to come away easily from the walls of the pot. Allow to cool.
2) when Cake mix is cooled down using electric mixer add one egg at the time -to blend in
3) Transfer the cake mix to a piping With parchment paper cut out squares of about 10 cm, make sure you cover the paper with oil. For each squeeze the dough circles with a diameter of 6 - 7 cm
4) Heat the oil in a wide saucepan. Then put in the donuts with the parchment paper (paper up, and after 10 seconds or so remove it -be careful when doing it)
Fry for about 4 - 5 minutes on each side, the oil should have a temperature of about 180 ° C. (I usually take a good guess) Remove, drain on absorbent paper. Put aside to cool.when cooled down put some lemon icing on the doughnuts
