Shortcake using biscuit mix
Using the basic biscuit mix
This recipe is sort of a make your own Bisquick type of thing.
I have had it since my late teens when I went to live with and take care of my Grandpa after my Grandma passed away. My recipe card says it came from Woman's Day Magazine #213
Grandpa loved that it was way cheaper to make biscuits this way than buying the Bisquick.
Recipe makes 11 cups of mix
8 cups flour
1 1/3 cups nonfat dry milk
5 Tbsp double acting naming powder
1 Tbsp salt
1 cup shortening or butter
Combine dry ingredients in a large bowl and mix well with fork.
Work in butter with fingertips until very fine
Store in an airtight container in a cool dry place.
Fruit shortcake
4 cups biscuit mix
1/2 cup sugar
2 eggs well beaten
Butter softened
2 quarts berries
Whipped cream
Add mix and sugar then add eggs and water mix lightly to form soft dough
Divide in half and press half in a greased deep 9" layer cake pan
Spread with butter spread remaining dough evenly over first layer leaving the top rough.
Bake @425* approx 30 minutes. Separate layers and brush stack berries between halves and on top. Serve warm with whipped topping
