    Pumpkin + Cake Mix=Good Stuff!




    I love dessert but I know I need to really watch what I eat so I've been looking for some healthier alternatives. I first heard about this from the "Hungry Girl" on a local radio station where she talked about taking a can of pure pumpkin puree and simply mixing it with a box of cake mix, and baking it. When I did an internet search, I found the following recipe which adds some applesauce as well.

    This is something I'm going to make this week!


    1 box cake mix (spice cake, yellow, chocolate)
    15
    oz pumpkin puree (NOT pumpkin pie mix)
    1/2cup applesauce

    Directions


    1. Mix all ingredients, pour in muffin tins, bake at 350 for 18-20 minutes

    For 24 smaller muffins, the nutritional breakdown is only 67 calories per muffin, 6.8g of sugar, and 1.2g fat each.

    Not bad, eh?

    Ooh, haven't tried with the applesauce. I have made her fudge out of choc brownie mx and her brownies out of choc cake mix. Delicious! Can't taste the flavor of pumpkin at all. I bet the applesauce will help get it back to a cake texture since the pumpkin brings cake to a brownie texture. Also ave made the pups bday cake using the pumpkin and yellow cake, was still good.

    Like the idea of yellow cake & pumpkin for the pooches!

    Also, i've heard many good things of adding a can of diet soda to cake mix and baking; heard it comes our very nice too. I think it can be any soda flavor.

    Have this baking now. Should be interesting since I crammed all the mix into 12 reg size muffin tins. was really good licking the bowl tho, the girls enjoyed it.

    Oh my gawd...... I will just move this now because these r beyond fabulous! Def. will make again!

    The bigger problem I find with this recipe is the puppies assume anything with pumpkin is for them. Lol so I guess it is all of ours!

    I'm glad you liked them! I just made another one with Trader Joe's Pumpkin Bar mix and simply added 1 can of pumpkin to it. It came out nicely--more dense than the normal recipe, but i like that, and thick and gooey.
