Bacon Beer Cornbread
1 1/2 cups cornmeal
1 1/2 cups wheat flour
2 tablespoons sugar
1 1/2 tablespoons baking powder
3/4 teaspoon salt
3 large eggs
1/2 cup milk
1 cup beer
1/3 cup sour cream
6 slices thick-cut bacon, chopped
1/2 cup unsalted butter, melted
Preheat oven to 375 degrees.
Fry the bacon until crispy in a 9- or 10-inch cast iron skillet. Remove bacon and drain on paper towel, keep bacon fat.
Place skillet in the oven, to keep it hot while you mix the rest.
In a large bowl, combine cornmeal, wheat flour, sugar, baking powder and salt. In a small bowl, whisk together eggs and milk. Add milk and egg mix to dry ingredients and combine. Add sour cream and beer and mix to combine. Mix in butter and bacon fat until batter is somewhat smooth and just combined. Fold in bacon bits.
Pour batter into hot skillet and bake for 30-35 minutes or until top is golden.
Let cool before slicing.Last edited by bullmama; 01-26-2014 at 03:04 PM.

Uh...wait. This is a healthy recipe. Did you not see the wheat flour and unsalted butter?
We may live without poetry, music and art; We may live without conscience, and live without heart; We may live without friends; we may live without books, But civilized man cannot live without cooks.
