    Sherry's Turkey Meatball Casserole

    I'm always trying to be so "inventive" in my kitchen. My local grocery market had Skinless turkey burger on sale for $1.69 a # if you bought 10# or more. I have a problem getting hubby to eat Turkey burger or chicken burger for that matter. He's all beef. You can use beef if you like in this recipe.
    Here's what I did on the fly

    meatball ingredients
    two # ground skinless turkey burger mix egg, spices and bread crumbs together first
    1 raw egg then raw burger and form into balls and bake at 350 for 30 mins
    1 cup plain bread crumbs
    1 tbsp chopped chives
    1/2 tsp garlic powder
    1 tbsp seasoned salt
    2 tbsp dried chopped onion

    in the meantime,
    cook 2/3 box of large crimped elbow macaroni 3/4 of the way done, empty in colander and rinse

    in the same empty large pot on low heat mix

    1-1/2 cups of 2/3 less fat Velveeta Cheese
    1-1/2 cup half and half cream
    1 cup chicken stock
    6 tbsp salted butter
    about 10 large sprigs fresh parsley chopped
    3 cups broccoli florets

    when cheese is melted

    mix everything together and pour into ungreased casserole dish
    bake for 30 minutes in preheated 350 degree oven

    top casserole with hot spiced Panko bread crumbs, about 1 cup
    and put back into oven at 450 for another 15 minutes or until bubbly and golden brown.

    serves about 8

    Mmmm...sounds delicious, Sherry!

    I like using ground turkey or chicken in place of beef in recipes too.
