Swiss cheese and tuna casserole
Cook 3/4 cup rice according to package directions.
Preheat oven to 350*
Melt 2 tablespoons butter in a 1 1/2 quart saucepan. Blend in 2 Tbsp flour and salt and pepper to taste until smooth, remove from heat.
Gradually stir in 2 cups milk heat to boiling stirring constantly. Boil and stir one minute.
Remove from heat and stir in 1 cup shredded Swiss cheese until it melts mix in rice and 1 can drained tuna.
Place in a greased 1 1/2 quart baking dish and bake 20 minutes.
Serves 6

Made this one last night and it is good! I added some white wine and parm cheese along with 2 cloves garlic and served it with brown rice cuz thats what I use for everything. Very good! I am curious to try it with cheddar cheese next time maybe too.

We can buy it at any grocery. But this is Wisconsin. They didn't start calling people from Wisconsin Cheeseheads for nothin'.

We have bought blocks of Swiss though and shredded ourselves. It's cheaper that way usually.

Couldnt buy it shredded here in Cali but it is easy enough to shred up in my food processor. I just froze what I didnt use for next time.
