Chicken cornbread casserole
Approx 2 cups chicken- I used some left over chicken cut into bite sized chunks.
1 pkg. Chi Chi's restaurante seasoning. Or your favorite taco seasoning
1 package cornbread mix.
1 cup shredded taco cheese blend.
Preheat oven to 400*
Put chicken in skillet add seasoning packet and recommended water cover and simmer while mixing cornbread per directions on mix.
Spray small casserole dish with cooking spray
Put chicken in dish
Sprinkle cheese over chicken
Spoon cornbread mix over cheese covering cheese completely
Bake 20 minutes until golden brown
Let stand 5 minutes before serving.
Serve with liberal butter and or sour cream.
Variations:
Chopped green pepper and or onions sautéed with chicken
Corn layer
Salsa layer
We had it without the variations for lunch today.

To me it sounds like the chicken starts out already cooked. I'm making this tomorrow and I'm wondering...cooked or raw to start???
