Baked Italian Casserole
So starting the New Year, I decided to continue my running and loosing weight but added an extra. Every Friday I will experiment for a good recipe but making it healthy. Today I started with Pasta. I have a race tomorrow and I needed to carb up. So this is what I did and I am very very happy with it.
1 box of whole wheat or Multi grain pasta (Penne, ziti etc..)
1 jar of your favorite spaghetti sauce. I used a Prego low fat with just garlic.
1lb of ground Turkey Breast. Make sure it is BREAST, people buy ground Turkey and think it is one of the same. It isn't, ground turkey includes skin and dark meat.
1 can of petite tomatoes
1 Onion chopped
Mozzarella cheese. I used a 1/2lb Shredded
Jar of Parmesan Cheese
Now this will fit in two loaf pans, in case you want to place on in the freezer for later. Or any casserole pan.
I boiled the pasta and browned the Turkey Breast with the chopped onion (green pepper is good too). Once the pasta was done, I stirred in the jar of Sauce, tomatoes and Turkey Breast into the drained pasta.
I then layer the meal. First a layer of pasta mix then a layer of cheese (as much as you like) sprinkle with the Parmesan cheese. Next is another layer of pasta, layer of Mozzarella Cheese then sprinkle with Parmesan. Do this until pan is full but end with the cheese. All is cooked so if you want to put it in the oven right away. 350 for about 30 mins.
I pre made mine, refrigerated it and then heated it up for 50 mins, or until the sauce is bubbly.If at first you don't succeed, do it your wife's way!

Yum, this sounds delicious AND healthy too. Not easy to find such recipes. Plus, most of the ingredients are already in my pantry.
