Un-Stuffed Pepper Casserole
Just like Stuffed peppers, only easier!
1 lb. lean ground beef (I also like to use Italian sausage instead of the ground beef)
2 bell peppers, coarsely chopped
1 onion diced
3 cloves garlic, minced
2 cups cooked long-grain white rice
1 jar (24 oz.) favorite spaghetti sauce (I'm stuck on Neuman's Italian Sausage and Peppers these days)
1-1/2 cups Shredded Mozzerella, (or Kraft Italian* Five Cheese with a TOUCH OF PHILADELPHIA) , divided.
Salt, Pepper and Italian Seasoning To Taste
Brown meat in large skillet. Mix in onion, peppers and garlic, and saute' until onions are clear. Drain if necessary.
Stir in cooked rice, spaghetti sauce and 3/4 cup cheese.
Spoon into 2-qt. casserole sprayed with cooking spray; top with remaining cheese.
Bake 30 min. @ 350º or until heated through.Last edited by LariP; 04-20-2013 at 12:39 PM.

Bruce made this tonight using a couple red bell peppers and the Neumann's 5 cheese sauce and it turned out awesome! We like the sweetness of the red peppers over the green.

Yeah I grew up hating bell peppers. Turns out I only hate the green ones. Lol kinda like apples. Hated them too. No, just the red fancy apples. So knew?

I edited the recipe to say bell peppers. I think from now on we will opt for buying the red. We usually don't get them because they can be triple the price for the red or yellow. We got these on a super sale at two for $1.00 and that is normally what we can get green ones for. But some things are just worth getting because they are better even if they do cost a little more.

I only get my peppers at Costco, bag of 6 for around $5 I think, 2 orange, 2 red, 2 yellow, they stay fresh for quite awhile too. Nice big delicious juicy ones! I buy most of my produce at Costco. Then again we have a family of six lol!
