pumpkin whoopie pies!!!

I've baked regular vanilla chocolate whoopie pies before but never the pumpkin ones. Can't wait to see your recipe!

Ok here it is guys! They turned out great!
Preheat oven to 350
3cups flour
1tbl cinnamon
1tsp baking soda
1tsp baking powder
1tsp ground ginger
1tsp ground cloves
1/2tsp salt
1/2tsp ground nutmeg
mix dry ingredients above together and set aside
1 cup brown sugar
1 cup sugar
1 cup oil
1 15oz can pumpkin (not pie filling pumpkin natural pumpkin)
2 large eggs
1tsp vanilla
Beat together the brown sugar, sugar, oil and pumpkin until well blended. And 1 egg at a time and blend well. Last blend in vanilla.
Slowly add dry ingredients with the wet until well incorporated.
Put the batter in a pastry bag or ziplock and cut off a tiny corner if using a ziplock, squeeze each cookie round making approx 2 inches in diameter onto lightly greased cookie sheet, bake 11-13 mins cool on rack. (I used a spoon and ended up with lopsided different sized cookies so next time I will use a bag to squeeze the cookies onto the sheet, 12mins was perfect for my cooking time)
Filling
8oz pkg of room temp cream cheese
1 stick unsalted butter room temp
1tsp vanilla
dash of cinnamon
1-2 cups of powdered sugar
(i added some crushed pecans approx 1/2 cup)
Mix the above ingredients together until well blended gradually adding the powdered sugar to the rest of the ingredients
When the cookies have cooled completely spread filling onto one cookie bottom too much will ooze out the sides but there was plenty of filling so fill with what looks good to your eye, top with another cookie! stick in the refrigerator untill chilled!!
**You can eat right away to taste but the flavor is soo much better cold! I wrapped each cookie in saran wrap to store in the fridge! Hope you like and let me know what you think if you try it out!!
it made more than pictured but I took the picture halfway I prob got about 17-20 complete cookies with filling!

next time I will def try to make the cookies flatter, i think using the bag is prob the best idea!
