I really loved how these cookies turned out. Very easy to bake with minimal ingredients, yet so delicious with both a crispy and a chewy texture. I used some leftover Halloween chocolate bars instead of chocolate chips and omitted the nuts. I would never have known that there isn't any flour whatsoever in these cookies! Perfect for people who require a gluten-free diet.

Ingredients:

1 cup peanut butter
1/2 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 tsp baking soda
pinch of salt
2 tablespoons maple syrup (optional)
1 teaspoon vanilla extract
1/2 cup chocolate chips
1/2 cup chopped nuts (I omitted this)

Directions:

1. Preheat oven to 350 degrees F
2. Stir the peanut butter with the sugars until well blended
3. Add the egg, baking soda, salt, vanilla and maple syrup (if using), and mix well.
4. Add the chocolate chips and nuts to the peanut butter mixture
5. Take a teaspoon of the batter and shape into a ball, place on a well greased cookie sheet (place cookie balls about 1 inch from each other as cookies will spread).
6. Bake for 10-12 minutes (watch closely as these can burn easily)
7. Allow cookies to cool and enjoy with a tall glass of milk!
