    Buffalo Chip Cookies

    1 cup unsalted butter, softened
    1 cup shortening
    2 cups brown sugar
    2 cups granulated sugar
    4 large eggs
    2 teaspoons vanilla
    4 cups all-purpose flour
    2 teaspoons baking soda

    2 teaspoons baking powder
    1 teaspoon salt
    2 cups old fashioned oats
    2 cups corn flake cereal
    2 cups chocolate chips
    1 cup flaked coconut
    1 cup walnuts, chopped

    Preheat oven to 350 degrees.

    Cream together butter and shortening at medium speed. Cream in brown sugar and granulated sugar, until light and fluffy. Beat in eggs, one at a time, and vanilla, until fluffy.

    Sift together the flour, baking soda, salt and baking powder. (Note: delete salt if using salted butter). Mix into creamed mixture, half at a time.

    Stir in oats, corn flakes, chips, coconut and walnuts.

    Drop large spoonfuls onto cookie sheet (about 6 per cookie sheet) using an ice cream scoop (about cup of dough per cookie), spacing well.

    Bake in a 350 degree oven for 15-18 minutes.

    Thanks for this nice and yummy recipe and great to be have separate forum for cookies
