Oatmeal, Peanut Butter, & Chocolate Cookies (Gluten Free)
1&1/2 cups peanut butter
1 cup sugar
1/2 cup packed brown sugar
1/2 cup softened butter (1 stick)
2 teaspoons vanilla
2 teaspoons baking soda
3 eggs
4 cups oatmeal (NOT quick cook)
1&1/2 cups chocolate chips
1 cup finely chopped walnuts or pecans
1 cup shredded coconut
Preheat oven to 325. Using an electric mixer cream together peanut butter, sugars, butter, vanilla and baking soda on low until smooth. Add eggs and mix until blended. Stir in oatmeal, choc. chips, nuts and coconut until blended. Drop by rounded tablespoon on ungreased cookie sheet. Bake for 8 to 12 minutes.Last edited by LariP; 01-20-2013 at 07:27 PM.
