Pineapple and soy sauce chicken

This is a dish I made last night in order to eat it for lunch today. I love sweet 'n sour anything so if you do too, then this may be right up your alley (or crockpot)!
You can pretty much use any kind of chicken cut but I used some skinless, boneless chicken tenders. I ate this over a bed of fresh spinach and the delicious sauce served as the "salad dressing". So good!!!
This was found on Pinterest and I modified the ingredients a bit:
2 lbs boneless skinless chicken breast, cut into medium sized chunks
1/4 c. light soy sauce
1/4 c. packed brown sugar
1 c. pineapple juice
2 garlic cloves, sliced
1 whole onion, sliced
2 inch peeled, grated ginger root
a pinch of taragon (optional)
1/2 tsp. crushed red pepper or red pepper flakes (optional)
Throw it all in the crock pot and cook on low 6 hrs or high for 3. When it's all done, depending on how much meat you used, there will be extra juice in the crock pot.
