1 cup chopped onion
1 tablespoon minced garlic
5-1/2 cups chicken broth
2 cans (14.5 ounces each) Rotel tomatoes
1 teaspoon chili powder
teaspoon ground cumin
3 pounds boneless, skinless chicken (cubed )
3 tablespoons minced fresh cilantro
1 can (4 ounce) diced green chilies


Shredded Mexican cheese blend
Tortilla chips
Sour cream
Diced avocados
Diced tomatoes

Mix all ingredients (except garnishments) in a large crockpot. Cook on high for 4 hours or low for 8 hours.

I love the flavor of cilantro, so I normally add more than specified
