crock pot bacon and broccoli frittata
This is definitely something unusual ad i wasn't sure how will it turn up
As i hate wasting food i have used all the veg i had in my fridge and added bacon (that also have to be used) -in other words use what you have in your fridge
it all turned out amazing - bare in mind the thickness of frittata depends on a size of your slow cooker - mine was 6,5 l , but smaller crock pots will result in thicker fritatats
2 cups small broccoli flowerets
1 cup of Cheese
9 eggs, beaten until whites and yolks are well-combined
salt and fresh ground black pepper to taste (I didn't use much salt)
4 sliced spring onions
handful of mixed peppers
5 rashes of smoked bacon cut into squares
1) cut broccoli into small pieces , fry with spring onions and peppers on a small amount of oil for few minutes then add bacon and fry for another few minutes -
2 ) put a tiny amount of olive oil into slow cooker to ensure nothing will stick and then put everything from a frying pan into slow cooker -top everything with grated cheese
3) beat eggs with a pinch of salt and pepper until blended and pour mixture into slow cooker and mix everything to ensure everything is blended
Cook for 2 1/2 - 3 hours on LOW, or until the frittata is completely set Serve hotLast edited by Pati Robins; 09-17-2014 at 05:58 AM.
