Crock Pot Chicken W/ Black Beans and Cream Cheese
I got this recipe some years back from somewhere and is by far the easiest, fastest recipe ever and is very healthy if you use low/non-fat cream cheese. Doesn't sound as good as it is, trust me it is GOOD! Can be used for burritos or served over rice. Have heard of leftovers being used to top baked potatoes or even for enchilada filling. If you use frozen breasts the sauce is thinner and better with rice. If you use fresh breasts it is thicker and better for burritos.
Ingredients:
4 -5 boneless chicken breasts
1 (15 1/2 ounce) can black beans
1 (15 ounce) can corn
1 (15 ounce) jar salsa, any kind
1 (8 ounce) package cream cheese
Directions:
1 Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
2 Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
3 Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
4 Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.

Made this Monday night and it was very yummy! Dave and I both loved it! I ate it over rice, he put it in tortillas for a burrito.

Forgot to mention!!! Made this one last week ... so good! I love it! I ate it for lunch all week because my hubby wouldn't eat it since it has cream cheese. He eats NOTHING white in color, except vanilla ice cream. He's so weird. Oh, well. More for me!!!

OMG!!! [MENTION=17]cali~jenn[/MENTION] This is fabulous!! I am going to make burritos out of it so of course I had to tweek it, I did all that you put, and added 1 cup instant rice at the end. I just tasted it and LOVE it! Thanks, this will be a keeper!!! Can't wait for dinner..YUM!!

SO glad you liked it! Cant take credit, I got that recipe from a recipe site long time ago and it was like the top rated recipe there.

I know this was a year ago but this was really good. I served it over brown rice. I had to make a lot of food for my husband because I'm finishing up school in another state, so I froze the leftovers for him. I had a lot of sauce left over and it was great with Doritos. Hey! This sounds like my kinda recipe!
I just eMailed it to my daughter, too. College, crock pot...
I think I may have all the ingred for this. I'd picked up some cream cheese for a desert recipe, but may do this instead! LOL!

Now I know what to do with my frozen chicken breasts. I love these kinds of recipes that don't entail a lot of little ingredients. This one sounds so tasty

I just bought the salsa and the black beans at the grocery store today. I got neufchatel cheese instead of crm cheese tho b/c they didn't have lowfat crm cheese. I'm wondering , if i put it on "low" instead of high setting, how long do you think i should cook the chicken for?

How long? I usually cook like 8 hours no matter what. If you set it in the morning and rnt in a rush to get it done, it should be fine by evening. I have never paid that much attention to how I cook it ones fly snd it always turns out perfect, you can't mess it up. The Neufchâtel cheese is the same as low fat cream cheese, or so I have been told. Will be good!
