Crock Pot Chuck Roast
**Winner** Favorite Crock Pot Recipe August 2012
2-3 lb Chuck Roast
1 cup Beef Broth
Lipton Beefy Onion Soup Mix
Baby Carrots or whole carrots
Large Onion
1 cup Green Beans (fresh or canned- don't matter really, optional)
1 Tbsp. oil
Salt, garlic salt and pepper to taste
2/3 c red wine
1 tbsp minced garlic
Diced Potatos (optional)
Brown the Chuck Roast in oil on high in a skillet. Sprinkle with Salt & Pepper to desired taste while browning. I may also sprinkle a bit of garlic salt, I am a 'do as I please' kind of cook. I never follow the recipe to the exact directions....
In this photo I am doing 2x the roast, we have a big family!
Cut an onion up into rings. Peel and slice carrots into 1 inch pieces. If using baby carrots leave whole. Spray crock pot with cooking spray to prevent sticking and for easy clean up. Lay onions and carrots in the bottom of the pot. Place browned roast on top and juices from browning.
Add 1 cups beef broth. (Note: I use5-6 Wylers cubes and 1 cup water). Add 2/3 cup red wine. Sprinkle roast with 1 package of Lipton Beefy Onion Soup.
Let cook on low setting if it is before noon, about 8 hours. If it is after noon, cook on high setting for about 5-6 hours.
About an hour before serving, open pot and put in green beans.
You can replace beef broth with 2 cups water and 4-6 bullion cubes. I usually even add a couple cubes into the beef broth
Serve with baked potatos. If you like potatos in your pot, you can diced up potatoes about 2 hours before it is done cooking.... I also add green beans at this time if I am in the mood.
You will know it is done with the meat falls apart in the pot.I cook it from about noon to 6 PM on high.

[MENTION=1]Desert Sky[/MENTION], I made this yesterday, I added baby portabella mushrooms, little red potatoes and little yellow potatoes, and served with fresh hot baked french bread last night, it was DELICIOUS, we ate til we were stuffed!! Even got a text from my hubby today while I was at work complimenting me on what a great meal it was, I am so glad we liked it because it is our dinner again tonight!!. Thank You!! And it was the first time I have used a crock-pot in over 10 years!! I love my new crock-pot!!!

That sounds good Lisa.... and I like the use of pix that many of you are using in your recipes lately. Kelly and I and a few others were just talking this morning about looking for new ideas for dinner,,,,, this sounds like a good one to try.

Yay. I am wishing I had seen this before grocery shopping. Maybe next week. This is actually how I make mine but I usually dont actually put in much in the way of veggies and then end up using leftovers for beef dip sandwiches with horseraddish. Making me hungry for mashed potatoes and this roast now.

I finally bought my roast and it's defrosting in the fridge today. I'm going to make this recipe in time for New Year's Day early dinner. Can't wait!!

Can I just say something re. this recipe? if you haven't tried it yet, MAKE THIS NOW. Or at least in the next few days or this month. Make it several times this month in fact!
I truly love this recipe. Had it for dinner just now...meat was so tender and juicy. The "gravy" that results from cooking the meat is delicious to just drink up by itself. I ate it over steamed white rice, however
The only change I made was using diluted red wine vinegar instead of red wine.
Did I say I love this recipe yet? :thumbup:
