Not your ordinary Crock Pot Chili
**WINNER** Recipe of the Week July 2012
I made this yesterday, and it was so good. I tried to keep track of what I put in it because usually I make my chili to taste.... so hopefully this is right!
2 lbs Hamburger
2 cans roasted Diced Tomatoes
1 T. minced Garlic
1 large onion or 1.5 small onions
1 bell pepper (chopped)
2 jalepeno peppers (chopped)
2 Aneheim peppers (chopped)
2 T Cumin
2 T Sugar
2 T Chili Powder
1 T Oregano
1 can Tomato Sauce
1/2 c water
1 tsp Garlic Powder
1/2 tsp beef bullion
3 cans of assorted beans (I use one Dark Kidney, 1 light kidney and 1 black beans or pinto beans)
Salt and Pepper to taste
Cheddar Cheese and Tortilla Chips
In a large skillet, brown hamburger and drain off fat. Add garlic, diced onion, and peppers. Cook together about 10 minutes with lid on until the veggies sweat.
In a large crock pot, add hamb. mixture, diced tomatoes, tom. sauce, and water. Toss together and add remaining ingredients.
It will appear that there is not enough 'juice' at this point and seem overly chunky. But once it cooks down in the pot the juices will release from the veggies.
Cook on low 8 hours or on high 4 hours. Add salt and pepper to taste, and add more sugar if it seems too tart.
Serve topped with cheddar cheese and eat with tortilla chips instead of a spoon!

Also note you will have leftovers, so either split the recipe or use it by making a chili-mac casserole:
1 box elbow macaroni, cooked
Mix leftover chili with cooked macaroni, pour into a 9x13 casserole dish. Top with cheddar cheese. Bake covered until hot, about 30 mins on 350.

What's an aneheim pepper couldn't find them at the grocery store any ideas for a substitue?

An Anaheim pepper is the big green chili, like for chili rellenos I believe. Could be wrong but if I remember correctly that is the one. I accidentally used a yellow chili in my chicken tort coup before I knew what it was and I liked it better so you would be happy with any chili probably, depending on heat.
