Mexican chicken
I made this kinda last minute in the crock pot although the recipe called for pan seared and baked chicken. I am sure that would be great but I am bad at planning so made it with frozen, boneless, skinless chicken thighs (as I was running out the door) thrown in the crock pot on low for about 5 hours.
Ingredients
1 pound boneless chicken breasts (I used thighs)
Taco seasoning
1/2 cup enchilada sauce (I used more cuz I wanted extra for rice)
4oz. Cheddar cheese or pepper jack would be good
Green onions to sprinkle over top.
Put chicken in crock pot, sprinkle taco seasoning over top then add enchilada sauce. Cover and cook. Add cheese over top to melt before serving.
I made 1/2 brown rice and 1/2 quinoa since I am just getting used to quinoa and actually I like that mix better than just brown rice alone. Also added black beans just because.Last edited by bullmama; 01-26-2014 at 02:46 PM.

Don't ya just love your crock pot?! I like how creative you got w/this recipe, Jen. It sounds really delicioso!
