Thread: Hey Peeps!

Happy Easter Evening, everyone!

I made these cupcakes for the holiday. They're Angel Food cake pineapple cupcakes with marshmallow whip cream frosting and of course, topped with a Peep bunny.

The cupcake was made with 1 package Angel Food cake mix and one 20 oz can of crushed pineapple w/the juice. Just combine the two and mix. Bake in preheated oven (350 degrees F), for about 18min. Yields about 30 cupcakes.

For the frosting, I mixed 3/4 cup Cool Whip lite and 1/4 cup Jet Puffed marshmallow creme.

Each frosted cupcake is around 80 calories each (not including the Peep).

Thanks! super easy to make these cupcakes too and I wish Peeps were year-around I guess I could always buy them in bulk and freeze them?? LOL.
