Easy Peasy 2 Minute Pumpkin Pie
Found this recipe online today and had to make it! It's for a crustless "pumpkin pie". It's easy, it's quick, and it hits the spot when you have that pumpkin craving.
Ingredients:
1/2 cup pumpkin (pure pumpkin, not pie filling)
1 egg white (or 3 tablespoons liquid egg white substitute)
1 tablespoon brown sugar (or any sugar substitute you'd like)
Directions:
Mix the pumpkin and egg whites together and microwave for 2 minutes.
Add your sweetener, top with some whipped cream and voila...pumpkin pie!

It really tastes like it? So kinda a pumpkin pie pudding almost. Mmmmmm and healthy!

Yup, especially after you put the sweetener in. I think some brown sugar or maple syrup would be a good add-in...and then some whipped cream or vanilla ice cream on top. Pumpkin pudding is a good description of it. I gave some to Tate and Finn last night and they loved it too!

I so could've used this recipe this past weekend. I just wanted one slice of pumpkin pie, which they usually have at the grocery store...none! So I bought a whole pie
(and I'm the only one that eats it in the house)
