    Easy mayo cake







    I know this cake might sound a bit bizarre - you might ask "who is this crazy to put a Mayonnaise into a cake? "
    Trust me on that one -you cant taste it ,cake is supper spongy and springy
    You are going to love it!
    It is also easy to alert the recipe into a basic cheat chocolate cake -just add cocoa powder into the mix

    1,5 cup of flour (all purpose )( mix should be medium thick )
    1 cup of sugar
    3 whole eggs
    3 tablespoon on mayonnaise
    1 teaspoon of baking powder
    1 teaspoon of eater vanilla, lemon,almond flavouring of your choice

    It is simple like 1,2,3

    1) using a mixer -mix eggs with sugar for few minutes

    2) add flour and baking powder

    3) then mayo and flavouring

    After you grease the baking tray of your choice as this cake bakes pretty much in any shape ,pour in the mixture
    Preheat the oven to 160-170 c and bake for around 45-50 minutes or until wooden bbq skewer comes out dry (reduce time if you have shallower baking tray)

    (Serve with icing sugar,lemon icing, chocolate icing -whatever you like)
    In this picture i used lemon icing and some mini eggs for a seasonal (Easter) decoration

    To jazz the cake up a bit
    Pour 2/3 of the cake mix and to a remaining 1/3 add 3 teaspoons of cocoa powder -then pour the mixture into the middle on the baking tray -it gives nice 2 tone uneven look

    I have heard of using mayo in cakes! this one sounds so good and simple and yummy!! Your cake looks beautiful, btw. Great picture!
