Banana Pudding Cake
If you don't like "faux banana" flavoring but do like fresh banana baked goods then this is the cake for you. It's quick, utilizes those last couple of bananas hanging about and very good. We like it with chocolate icing, but I am sure caramel, cream cheese, or even a simple sugar glaze would be great.
1 pkg. ( 4-serving size ) banana cream instant pudding
1 pkg. yellow cake mix
1/2 c. mashed ripe banana
4 eggs
1 c. water
1/4 c. oil
Combine ingredients in large mixing bowl. Blend, and then beat at medium speed of electric mixer for 2 minutes. Pour into greased and floured 10" tube pan or Bundt pan. Bake at 350 for 50-55 minutes or until cake springs back when lightly pressed. Cool for 15 minutes, remove from pan, cool completely.
