    Polish farmhouse apple pie (cake)




    this is one of the easiest posish apple cakes/pies (i havent atempted as yet to do more tradicional one - but i hope some of you might try it )


    cake mix

    • 3 cups flour
    • 1 teaspoon baking powder
    • 1 cup caster sugar
    • 1 vanilla sugar
    • 250 g of cold butter or margarine
    • 4 eggs

    apple filling

    • 2 kg of gala apples
    • 10 teaspoons of vanilla sugar
    • 1 teaspoon of cinnamon

    1 eel the apples, cut into small pieces and add together with the sugar and cinnamon to a frying pan and fry on medium heat until soft
    2 Sift the flour together with the baking powder add 3/4 cup sugar, vanilla sugar and butter. Add 3 egg yolks and 1 whole egg.(keep remaining egg whites for later )
    3)Knead the dough quickly and divide into 2 parts. Wrap in foil and place in the fridge for an hour.
    4)Roll out one portion of dough and put into a rectangular cake pan . Peel off the top layer of paper. Put into the refrigerator.
    5) using electric wisk - use the 3 eggs whites with 1/4 cup sugar, whisking constantly, until the foam is stiff and glossy.
    6) Preheat oven to 175 degrees. take the form of the cake out of the refrigerator and put apples. Cover with whipped egg whites. On top lay a second part of the rolled-out dough.
    Put into the preheated oven and bake for 1 hour After baking, sprinkle with powdered sugar

    I had to google vanilla sugar, looks like it comes in a package. Do you know approximately how much is in a package? It's not something available in the USA, but there are plenty of recipes for substitutes.

    I make my own -basically you meed a jar filled with caster sugar and stick few vanilla pods (don't cut them etc) -close the lid leave it for few weeks and you have vanilla sugar ;-)

    Other method -use teaspoon of vanilla extract to the cake mix

    In a vanilla sugar packet there are aprox 3,5 teaspoons ;-)
