My fave cake on halloween or bonfire night
Hope the measurments are ok i chose to go for oz as opposed to grammes.
Yorkshire Parkin
6oz self raising flour,
6oz unsalted butter,
2eggs
5oz oats
6 fl oz/175 ml golden syrup
4fl oz/ 120 ml Black treacle
6oz soft brown sugar
2tablespoons ground ginger
1teaspoon grated nutmeg
1teaspoon mixed spicpinch salt
1fl oz/ 30 ml milk
Prehat oven to 140 oC
Mix all dry ingredients in a large bowl,
Heat butter syrup and treacle gently in a saucepan stirring until melted and combined,
Stir into the dry ingedients,
Beat the eggs and milk and add to the mixture and stir until soft and thick,
Pour into a greased loaf tin and bake for 1-1 1/4 hours until firm.
Remove from oven and stand in tin for 15 minutes before turning out.Last edited by LariP; 01-20-2013 at 05:27 PM.

A very dark(black) thick sticky syrup quite bitter/sweet thats why you need the golden syrup too.

I think this cake is very much like my grandma's black molasses cake from what I can see. Except we put raisins in the molasses cake.
