Apple in a Poke
Apple in a poke. (apple dumplings)
2 cups water
2 cups sugar
1 tsp. Cinnamon
1 1/4 tsp. Nutmeg
6 drops red food coloring
3 tsp butter
Combine water, sugar, spices and food coloring in a sauce pan. Bring to boil then cook for 5 minutes. Remove from heat and add butter stirring until melted.
2 cups sifted flour (all purpose)
2 tsp baking powder
1 tsp. Salt
3/4 cup shortening. ( I always just use butter when these old recipes call for shortening)
1/2 cup milk
6 med sized apples cores and peeled.
Sift flour, baking powder and salt together. Cut in shortening to a fine crumb consistency. Add milk, mixing just until flour is moistened.
On a lightly floured surface roll the dough into a 12"x18" rectangle.
Cut into 6 equal squares. Place an apple on each square.
Sprinkle apple with cinnamon and nutmeg to taste.
Moisten edges of dough and pinch corners together.
Place apple dumplings in an ungreased pan. Pour sauce over them. Bake at 350* 30 to 35 minutesLast edited by LariP; 01-20-2013 at 05:47 PM.
