Citrus Burst Cupcakes
Went to a friend's for Easter dinner and she served these little gems and everyone went nuts over them. They are light and airy and surprisingly refreshing.
Just prepare a white boxed cake mix as directed for cupcakes.
When they are done and cooled, boil one and a half cups water.
Dissolve one box of sugar free orange and lime jello in the same bowl with the boiling water.
Take the end of a wooden spoon (be creative if you don't have one) and gently poke the cupcakes 4-5 times making sure to go to the bottom.
With a spoon, spoon equal amounts of jello over each cupcake. Chill in fridge for at least one hour.
Before serving, take cool whip and add the zest of one lemon, one lime and almost one whole orange. Gently fold to mix and top each cupcake.
Serve the cupcakes chilled.
