A Lighter Lemon Bar
I have made this recipe many times and [MENTION=1]Desert Sky[/MENTION], whenever I have an abundance of lemons on hand, this is what I bake!
Lemon Bars (from Cooking Light): yields 16 bars
Crust:
1/4 cup granulated sugar
3 tablespoons butter or stick margarine, softened
1 cup all-purpose flour
Topping:
3 large eggs
3/4 cup granulated sugar
2 teaspoons grated lemon rind
1/3 cup fresh lemon juice
3 tablespoons all-purpose flour
1/2 teaspoon baking powder
1/8 teaspoon salt
2 teaspoons powdered sugar
Preheat oven to 350°.
To prepare thecrust:
Beat 1/4 cup granulated sugar and the butter at medium speed of a mixer until creamy. Lightly spoon 1 cup flour into a dry measuring cup; level with a knife. Gradually add 1 cup flour to sugar mixture, beating at low speed until mixture resembles fine crumbs. Gently press mixture into bottom of an 8-inch square baking pan. Bake at 350° for 15 minutes; cool on a wire rack.
To prepare topping:
Beat eggs at medium speed until foamy. Add 3/4 cup granulated sugar and next 5 ingredients (3/4 cup granulated sugar through salt), and beat until well-blended. Pour mixture over partially baked crust.
Bake at 350° for 20 to 25 minutes or until set. Cool on wire rack. Sift powdered sugar evenly over top.

Sure, I can send you some. My tree isn't huge but it has quite a few. I just pick em as I need them and they last forever on the tree. Pm me your address.
I am not sure but I tend to think this might be a Meyer lemon tree since it is so such sweeter than the grocery stores. The skin on it is thinner too and they are very juicy. Hopefully as cold as it is should make them ship well too cuz they don't hold up long on the counter for some reason. I always out them in the fridge.

I was looking for a nice lemon pie recipe, but your lemon bar recipe sounds very good good to me. I will tried it this week.

FABULOUS!! This was very good. I did not have fresh lemons so I had to use the lemon juice in the bottle. I thought I was doing something wrong but everything turned out great. Thank you for the recipe!!
