    Surprise Lemon Pudding

    4 lemons, finely grated zest and juice
    3 1/2oz of butter, softenend
    6oz caster sugar
    4 eggs, separated
    2oz all-purpose flour
    4fl oz milk

    Preheat oven to 350f

    Butter dish.

    Using a beater, cream the butter and sugar until fluffy

    Add lemon zest and juice. It may curdle. Add egg yooks, one at a time, beating continuously

    Beat in flour and milk

    Whisk egg whites until peaky. Fold in gently.

    Pour into a dish. Place this dish into a large dish, and fill with boiling water until the water is approx half way up the pudding dish. This is your "bain-marie".

    Bake for 45mins.
