Rhubarb Cake
Rhubarb Cake
2 Cups Sugar
˝ Cup Butter or Margarine Creamed together
Add 1 tsp vanilla and 1 egg
1 tsp baking soda
˝ tsp cinnamon
1 Cup buttermilk (plain milk works but buttermilk is better)
2 Cups flour
Mix well (A couple minutes with a cake mixer)
Then stir in:
2 cups chopped rhubarb
˝ cup chopped nuts (I use whole walnuts)
Prepare the pan as you would for any cake mix. (I use cooking spray, you may also use the butter/flour method)
Sprinkle top with ˝ cup brown sugar and 1 tsp cinnamon that you’ve premixed together
Bake at 350 for 40-50 minutes. (till toothpick comes out clean)
Muffins can be made (I use the foil lined cups) fill only about half full and they will rise to the top of the tins. Bake approx 30 minutes.Last edited by LariP; 01-20-2013 at 05:32 PM.
