    What Are You Cooking This Weekend?




    I already have two recipes I'm planning to make:

    The Japanese drumsticks recipe that was posted by @cali~jenn, and the Edamame-roasted garlic dip that [MENTION=72]TraciInTexas[/MENTION] shared.

    I just need to get a couple more ingredients at the store tomorrow and then I'll be in the kitchen creating all the tasty goodness!

    What's everyone else cookin' ?

    Ooh nice! I am trying to splurge while being healthy so tonight is portobello pizzas with artichoke to snack on and tomorrow is Chinese chicken salad with artichoke to snack on. I LOVE artichokes so when the big huge long stem ones come out I eat them often. Mmmmmmm

    I have no idea what to do with a fresh artichoke. I saw some on sale this week but i wouldn't know what to do with it. Would love to hear some ideas from you!

    Easy henny! Boil or steam it. Cut the stem down to the base of the artichoke then toss the artichoke in boiling water for 35 ish minutes depending in the size. I use the big ones for that time. The long stems (if it is the long stem type) you are supposed to cut off and peel with potato peeler the outside layer of skin. Cut the dry end and sliced own the middle before boiling as well. Sme turn out awesome and tender like the heart and some are just tough. Ten I dip mine in mayo as I as raised to. Hubby likes to mix half sour cream, half mayo. I know many like butter or garlic butter which I have tried but always go back to what I grew up on, mayo. Mmmmmmmmmm...........

    Not at all, sooooooooo yummy. The first few rounds of baby leaves r not so tender but past that they should be good to go. Especially if you get the big long stem types they have right now. 1/2 per person is quite a bit and they refrigerate well for a few days. Taste just as good cold as hot. I just cooked 3 for the whole weekend and now we r good to go.

    I saw a recipe yesterday for a raw artichoke salad. They shredded them. Raw beets are also good like that (shredded). And asparagus is good in a salad raw if you cut them up small.

    Interesting! Never heard of eating them raw.

    We had tilapia and flounder last night with a huge pot of greens. Greens, fresh onion, and bacon... Mmmmmmm!

    Mmmmm I never buy fish anymore, it is sort of out of my radar. Went to buy tilapia once I think and saw that it came from china which grossed me out so I haven't looked since. Sad! We do have a fisherman s market 15 minutes from us that gets daily fresh deliveries but haven't bought fish from them. They r also a restaurant so we now go thereto eat. Think we should go and check their seafood too.

    I'm almost a pescetarian, and living 2 hours from the Gulf.... We eat LOTSA seafood!

    Autumn in the air brought on the urge for soup, corn still in season, so it was Chicken corn noodle soup , ummm so good

    Can't wait for soup season! Sadly tho in cali, autumn doesn't hit the air until about Halloween. Hot as heck lately! Tis weekend I bbqed some flanken ribs yesterday that I got pre marinaded from my Mexican market. Mmmmmmm..... That served with a corn salad and beans. Going to BBQ a big fat ribeye tomorrow. Have it marinading in bobs big boys blue cheese dressing. I hate blue cheese but this is the best marinade for beef.
