Whatcha eating this weekend?
Let's share our good eats (or even our "bad" eats), for this weekend, shall we? Things you've cooked...things you've eaten at a restaurant...we want to know!
I finally finished my last serving of the shrimp ceviche that cali~jenn shared. It was so good and kept very well in the fridge. I ate it w/spinach and butter lettuce, as well as wrapped in tortillas.
I also made a couple batches of granola...been eating lots of that with plain yogurt or just grabbing some to munch on.
Yesterday a.m. I went to a Girl Scout's fundraiser at Applebee's for some good old buttermilk pancakes, bacon, eggs and taters! yummy-licious...been awhile since i had pancakes.
Not really cooking much this weekend as I'm trying to empty the fridge of leftovers. Have several recipes on my list though.
So...what have YOU been eating?

Well.... I did make a new recipe last night that was awesome. I need to post it actually, thanks for reminding me. Chicken, jalapeño burgers with guacamole on top. Mmmmm roasted some broccoli to go with and a couple French fries. Friday we just ate frozen pizza cuz I didn't have time to make the burgers. Lol nothing fancy or crazy special round here....

Re: Whatcha eating this weekend?
Ok, what's everyone cooking this weekend? I just got my chuck roast seared and in the crock pot for my chili colorado burritos. Mmmmmmmmm... That will be our dinner today and tomorrow along with a southwestern chopped salad with a cilantro lime dressing.
we have a pool party Sunday so am making my ceviche to use as a dip with tortilla chips for that.

Re: Whatcha eating this weekend?
Well, this weekend will not be a big cooking one for me. Tomorrow my 11 yo niece will be spending the weekend with me and I'm taking her out for a traditional English Tea in town. We'll be indulging in dainty finger sandwiches, scones, and all kinds of sweet treats. She loves to bake and told me she wants to bake cupcakes with me so we'll likely do that also. Then on Sun I have a 20 year reunion with a group of my Pharmacy school classmates at the Soup Plantation...just an informal get together since none of us could make it to our real reunion which was back in April in San Francisco. So, more eating than cooking for me...but I'm not complaining!
Jenn, your crockpot dish sounds so good! homemade burritos! Sounds like you have a food-filled weekend coming up!

Re: Whatcha eating this weekend?
Last Friday we barbecued chicken breasts and hotdogs, and baked potatoes, and I made a salad with it. On Saturday all the girls, my sister, myself, our two daughters, my best friend and her daughter all went out for dinner for my Mom and best friends' birthday. ( My friends mom is my moms friend for the past 51 years, but she sadly has Alzheimer's now, and doesn't know anyone, her Dad also has Dementia, and my friend is an only child, it's so sad for her. My mom baby sat her until we were 11 years old while her parents worked, so we're pretty close) My friend has the same birthday as my mom. We went to a nice local restaurant, and I had a steak dinner with garlic mashed potatoes, and grilled mushrooms, and vegetables. It was very delicious. After we went back to my sisters house where all the guys were and we hauled out the karaoke machine and sang and laughed until 2:30 in the morning. It was a blast. We had all kinds of finger foods chips, salsa, dips, and the guys had ordered pizza.
