Meatloaf?? Mine are flops!
I can cook just about anything you want, I consider myself a good cook, I enjoy cooking it is a stress relief for me. I can make gourmet meals. OK then WHY can't I master a simple meatloaf that will stick together?? [MENTION=1]Desert Sky[/MENTION], I think we need a forum directed to "flops" Joe loves meatloaf it is a comfort food for him. I tried several months ago, flop...I tried again last night, bland and mushy. I have used bread, crackers, oats, you name it and they all fall apart, no flavor and suck! We just kind of stirred it into our mashed pot. last night. Does anyone have a good flavor-ful meatloaf that will stick together?? I told him I would post this and try one more time if it does not turn out I quit!! Meatloaf wins!!

Lol, well you got this in the right forum! I made a really good meatloaf not long ago.... I must dig for the recipe. Hope I can find it.

Larip posted a yummy looking recipe for one that I want to try. I say if all else fails try buying the premixed meatloaf in the service section of your meat dept. Our stores here have one that isn't too bad and you can just throw ketchup on top and let it cook. If I buy that I usually throw other stuff in to make it more homemade but you don't have to. Just a thought.

I stand behind my Fluffy Meatloaf recipe. I think it's the horseradish in it that helps it have great flavor, although it is a hearty flavor, not hot at all.
When you make it it will be a wet mound. Not stiff like other meatloaf's I've tried. But it holds together fine for me. The egg acts as a binder, so since your intolerant of eggs and use just white use two egg whites. Are you also lactose intolerant? I forget. if so try replacing the milk with a non dairy replacement. I have used coffee creamer in place of milk in several things.

It's all about Lari's fluffy meatloaf!!! We made it last night and Dave and I both agree, hands down best meatloaf we have ever had! I agree, the horseradish does add a nice bold flavor but didn't make it at all hot.

Yes [MENTION=7]LariP[/MENTION] I am lactose intolerant, but I can eat something like meatloaf with an egg in it. But I can NOT sit and eat an egg. I use soy milk instead of milk and it does the same as milk. Now if something has 6 eggs in it like your chicken and rice recipe, I can't do that. but if it is only one and it is well spread out I would be fine.

Try this...
I've been working this up for my daughter, who at 17 is wanting to make meatloaf...It is outta my head, and I haven't made it since I started jotting it down; but it should be close. I sneak carrots into it (and into spaghetti sauce) from an old habit when the kids were young and rebelled at carrots. LOL!
Meatloaf
INGREDIENTS
1 cup onion, chopped fine
1 celery, chopped fine, or a pinch of celery seed (ALT: cumin or sage, depending in your side-dishes.)
1 Tbsp minced garlic, jar in the fridge
1 carrot, chopped fine
2Tbsp beef bullion
2 Tbsp unsalted butter
2 teaspoon salt (use 1 1/2 teaspoons if using breakfast sausage)
1 1/2 tsp pepper
3 tsp Worcestershire sauce
3/4 cup ketchup, or better yet -- cocktail sauce!!
1 1/2 pounds of ground chuck, lean beef, or beef/veal mix
3/4 pound of spicy ground pork sausage or breakfast sausage
1 cup fresh bread crumbs or Panko
2 large eggs, beaten slightly
METHOD
1. Preheat oven to 350 degrees F.
2. In a big, heavy skillet cook the onion, celery, carrot, and garlic, in butter, over medium heat, stirring, for about 5 minutes. Cover the skillet and stir occassionally until the carrots are tender, about 5 more minutes. Stir in salt and pepper, Worcestershire sauce, and 1/3 a cup of ketchup. Cook for 1 more minute.
3. In a large bowl, combine the meats, eggs, vegetables, bread crumbs -- form into a loaf and put onto a rectangular cookie cooling rack, or broiler pan, so the grease can run off. Cover the loaf with remaining ketchup.

Yeah, anything drain that grease offa it! And then it doesn't have the soggy bottom that just gags me, too!
I'm not a fan of any form of ground meat.

Made it, finally, last night and have updated the recipe.
I had forgotten bullion, and the ketchup was too small. Also I use cumin or sage instead of celery seed sometimes... Last night was sage!
