    Slow Cooker Corned Beef ???




    With St. Patty's Day upon us ... I'm wondering if anyone has a good Corned Beef and Cabbage recipe? I plan to do it in my slow cooker - but I'd be happy with any recipe!!

    My cousin makes hers in the crock pot but honestly I am afraid to make it and not like it so I stay away. Sad! Especially when hubby and I both have quite a bit of Irish in us. I bet [MENTION=2]Sublime[/MENTION] has a good recipe.

    I usually just use the seasoning packet that comes with the corned beef. And a bottle of beer cook on low about 8 hours. Add cabbage and potato's the last two hours.

    But in the interest of an actual recipe I found this on Cooks.com (I have found many very good recipes there over the years) it sounds really good, just adds more spices than I have ever tried. We just might have to try this way this time.


    CROCKPOT CORNED BEEF AND CABBAGE *
    1 (3 to 4 lb.) corned beef brisket
    1 large head cabbage (preferably savoy)
    8 peppercorns
    6 cloves garlic, peeled
    4-5 parsnips
    1-2 turnips
    2 bay leaves
    1 pound carrots (not baby), peeled
    6 large potatoes
    1 stalk celery, very thinly sliced
    3 whole cloves (spice)
    1/2 tsp. Old Bay seasoning
    1/4 tsp. black pepper, ground
    Wash brisket. Using a small sharp knife, cut tiny X slits in the meat and insert garlic and cloves pieces.
    Place the meat in a large Crock-Pot and cover with water. Add bay leaves, peppercorns, Old Bay, 2 carrots and sliced celery.

    Heat on high for 30 minutes. Skim off any foam that surfaces and set heat to low.

    Meanwhile, prepare vegetables. Quarter the cabbage, peel potatoes, carrots, turnips and parsnips. Slice vegetables into 2 inch chunks.

    During last few hours, add remaining vegetables and continue to cook for 2-3 hours, or until vegetables are tender. Remove bay leaves and discard.

    Drain and serve with yellow mustard.

    Total Cook Time: 5-8 hours on low, or until meat and vegetables are tender.

    I love corned beef now and then, but especially love the grilled reuben's we have with the leftover corned beef.

    [MENTION=17]cali~jenn[/MENTION] You know me so well LOL I was going to bring this up today! I make corned beef every year for Patty's Day (my favorite holiday ). My way is super simple, I buy one of the corned beef roasts that already has the irish seasonings in it, put it in the crockpot, cover it in beer (whatever kind I have) then cook all day! That's how one of my co-workers suggested I make corned beef several years ago and it turned out so good I do it this way every year.

    [MENTION=2]Sublime[/MENTION], looks like you make it pretty much the same way I do. And sometimes simple is best. No need to get fancy. When we were shopping last weekend I mentioned getting parsnips for the cooks.com recipe. Bruce vetoed the idea, and I quote " Just make it like you always do".

    I do it fairly simple myself, corned beef a cabbage quartered, beer and the season packet. Slow cook all day. But now that the kids aren't home, no use making it just for me.
    If at first you don't succeed, do it your wife's way!

    Thanks so much everyone! I didn't end up being able to make it for St. Pat's ... my Gramma made it this year since she was hosting dinner (it's also my mom's bday ). However, Julia and I LOVE it so I might add it to our regular menu. I love the idea of simple ... I do best with simple recipes!
