Leftover Easter Eggs
So what does everyone do with their hard boiled eggs from Easter?? With 4 kids we do two dozen eggs. Thought it would be a good idea to post boiled egg recipes

Sierra is an egg freak so she actually demanded them for breakfast until they were gone. (piggy) lol. Egg salad sandwiches of course are theee best to make with them. Could always use them for a potato salad even when you have too many.

My Egg salad, Potato salad and chicken salad all have LOTS of boiled eggs in them.
Also I love deviled eggs.
My sauce recipe for all of them is VERY similar
Measurements all approximate, I never measure just 'eyeball' when I'm making this. Make double or triple amount for salads. this is about what you would need for a dozen eggs I think.
1 cup mayonnaise
1 Tablespoon mustard
1 Tsp sugar
1/2 tsp celery seed
To Taste salt and pepper
For deviled eggs use the dressing. add finely shredded cheddar cheese. (About a 1/2 to one cup I like a lot) Swap celery salt for celery seed mix yolks in dressing.
For Potato Salad use Onion chopped fine and Potatoes cut into bite sized pieces after boiling and as many eggs as you like.
For Macaroni salad I add pickle relish, onions and lots of boiled eggs. Sometimes I also add shredded cheese.
For Chicken salad, Boiled eggs, chicken, onion. and if you want chicken macaroni salad then add the macaroni.
I don't care for the texture of celery in my salads, so that's why the celery seed is ideal. You get the celery flavor without the texture. But if you like the celery texture you could chop some of that or carrots up and add those.

we love to make egg salad, use them in potato salad, tuna salad but most of all .....pickle them

I've been in a pickled egg mood lately. Been through two 18 egg batches over the last month or so. Need to make them again. I'm not tired of them yet.

Pickling them is a good idea. My husband loves pickled eggs. We usually use them up in egg salad and making deviled eggs. I scoping out new recipes for deviled eggs and recently spiced up my standard recipe with some Siracha and cooked bacon.
